1 - 2lbs boneless cubed beef 1 cup low sodium beef broth 1/3 cup dry sherry 1 small onion, chopped 2 garlic cloves, minced 1/2 tsp dried oregano 1/8 tsp dried thyme 1 bay leaf 1/2 cup fat-free sour cream 1/4 cup plain whole grain flour 2 Tbsp water
First - Mix beef, broth, sherry, onion, garlic, oregano, thyme and bay leaf in the crock pot. Cook on high for 4 -5 hours. (Until beef is tender).
Second - Mix sour cream, flour and water in a bowl. Stir in 1 cup of hot liquid from crock pot into the sour cream mix. Then stir the sour cream mix into the stroganoff. Cover and cook until thick and bubbling. About 30 minutes. Discard bay leaf before serving.
Serve over brown rice or whole wheat pasta.
(I'm not sure where this recipe came from. It might be a weight watchers recipe. A friend gave me the recipe several years ago and does not remember where they got it.)

I tried this tonight. Not sure if it was subbing low fat plain Greek yogurt for the FF sour cream or what I did wrong. The sauce was really grainy and almost separated looking. Any suggestions?
