Cuban Style Pork & Sweet Potato Stew

One of my family's favorites! Even the ones who say they don't like sweet potatoes, will LOVE this one!

1 large sweet potato (about 1 lb), peeled and cut into 1/2 inch dice
1 lb pork tenderloin, cut into 1 inch pieces
14.5 oz can of diced tomatoes (we like fire roasted or use low sodium)
1 small can of diced green chiles
1 garlic clove, minced
1/4 cup orange juice
2 medium scallion, chopped (green parts only)
1/2 tsp salt
1/4 tsp ground cumin
1/4 tsp black pepper
1 1/2 Tbs fresh lime juice
2 Tbs cilantro, fresh, chopped

Put everything in a 4- 5 quart crock pot except the lime juice and cilantro. Cover and cook on low setting for 7 hours.

Stir in the lime juice and cilantro and cook for 5 minutes more.
