what i am doing but i think i know what i did and may know what i should do next for my concoction in the crockpt today. Fairly new to the crockpot game and as a single dude it makes life much better when the grill is not being used. This
- 2 count of olive oil in the bottom of the 3Q crockpot
- add a handful+ of sliced baby carrots (some were ate in the process lol)
- 1 can of 'no sodium added' diced tomatoes (del monte)
- 1 can of Bushes 'reduced sodium' great northern beans
- 1 low fat low(er) sodium chicken andouille snausage (johnsonville)
- on top of that LAID 2 publix chicken BREASTS- TRIMmed some of the fat off
- Added copious amounts of fresh CRACKed black pepper (covered the BREASTS with it)
- a couple of sprinkles of red peppah flakes
- a teaspoon each of dried chopped cilantro and thyme
- Added progresso brand low sodium chicken stock until it just barely reached the chicken BREASTS
- added filtered water until the BREASTS were covered
- turned crockPOT on to LOW.
Will check after 4 to 6 hours. Dont have a meat thermometer, so this one has me a little nervous (due to the chicken). Plan is to shred the chicken when its done (which is why i have them on top), then add the shredded chicken back to the POT with some some baby spinach leaves and/or some wild brown rice. doubt it will be a soup and prolly more thicker than a stew....especially since its only the second time I am using brown rice. If i dont add any rice, i think it would be a 'stoup' but not sure.
Other thoughts:
- Wanted to use Cream of mushroom soup but the publix only had Campbell and it was not low sodium/low fat
- Spinach is in the form of washed baby leafs from the publix - almost went with mixed canned greens from Glory instead. I reckon I still could but running short of room in the POT as a 3Q POT seems to be an odd size.
- may be a bit much of garlic
- it will need salt ... i know this already....dangit.
- Not sure about the addition of rice/spinach and how much. Did not full appreciate how hygroscopic that stuff was the last time I used it.
- will pair with a Dragon's Milk or Sweetwater 420 Beer.
Will report on the results (if i don't get died from salmonanthraxjejuni) but I would welcome comments. The Crock pot started cooking at 10:20 am EST this morning.
