Chicken Jambalaya

Makes 6 servings, ideal for a 5qt crock
Ingredients: 1 lb boneless, skinless chicken breasts, cubed 3 cups chicken broth 1.5 cups uncooked brown rice 3/4 cup water 4 oz turkey sausage, diced 2 garlic cloves, minced 1/2 cup celery, sliced 1/2 cup onion, chopped 1/2 cup green bell pepper, chopped 2 tsp cajun seasoning 1/8 tsp hot pepper sauce 1 bay leaf 14.5oz can diced tomatoes, undrained
Optional to sautee/brown the chicken before placing in crock. Stir together remaining liquids, put in crock. Add chicken. Cover, cook on high 6 hours.
