Salsa Chicken

Super easy- just make sure you either use a fresh salsa or a low sodium one, such as Salsa Fresca from Sams Club.
Boneless Skinless Chicken Breasts 1-2 cups of salsa by taste, no sugar added 1 cup of water as needed
Put in your chicken, put in the salsa, add a little water if you're on the low side of salsa and cook on low for 6 hours or high for 4.
The acid in the salsa makes the chicken super tender and literally shreds with a fork and little effort.
Great in tacos, enchiladas OR
In the last 30 minutes add some cooked black beans (rinsed if you use canned) and corn for 'naked' burrito type meal.
