Slow Cooker SKINNY CHICKen Quinoa

Rinse and drain quinoa (it removes the bitter taste from grain). Throw all the ingredients in your slow cooker, cook on high for 4 hours or on low, 8. 20 minutes before serving, throw in the kale and turn heat to high. When done, shred the chicken, how simply Skinny is that? yum!
I wanted to find a recipe with ingredients I had on hand and one that called for Quinoa. I didn’t find the exact one, so I made my recipe from several others. I pesonally didn't add in the butter, but I thought it was nice option. Today I slow cooked this recipe on high, next time I will try it on low for 6-8 hrs as the chicken breasts cooked a little faster than veggies. Maybe it’s my smart pot, it always does that, it’s not me...really? ;-) wink wink. Next Skinny Slow Cook, I’m going to use red onion, thyme for more variety. =)
