Savory Slow Cooker Chicken Posted by Jessica Tighe 4-6 chicken breasts (I have a husband who comes home from 15 hour work days with quite an appetite) 2 cans of canned tomatoes (I've used both diced and stewed. I prefer diced. I'm sure you could even used the preseasoned canned tomatoes and just omit some of your own spices) 2 TBSP red wine (I add a little more) 1 bay leaf 1/2 tsp pepper 2 cloves minced garlic 1 chopped onion 1/2 c. chicken broth 1 tsp dried thyme 1/2 tsp. rosemary 1 tsp salt, or to taste. ( I think it's fine without extra salt, since I'm using canned tomatoes.) Optional: 2 c. broccoli I think basil or oregano would be great in this as well, just haven't tried it yet. I dump all the ingredients in the crock pot on low for 4-6 hours. We used a slotted spoon to drain off the tomatoes and onions and serve it along with the chicken over mashed potatoes. I think it would be good over rice as well. Sprinkle with good parmesan, if you want! I wish I knew where to credit this recipe.....my sister made it for our family when we had our youngest child and I made her jot down the recipe on a scrap piece of paper *Note: Recipe instructions modified to fit food safety guidelines.
