White Bean, Turkey, Pumpkin Chili Adapted from SkinnyTaste
1 1/4 lb lean ground turkey 1 cup chopped onion 1 chopped orange pepper 1 chopped yellow pepper 3 garlic cloves, minced 1 15oz can pumpkin puree 2 cups low sodium chicken broth 2 TBS chili powder 2 tsp ground cumin 1/2 tsp ground white pepper 1 1/2 tsp oregano 2 bay leaves 2 14.5oz cans great northern beans, drained & rinsed 1 4.5oz can chopped green chiles
Heat a skillet over medium heat and brown the turkey. Drain and add onion, garlic, bell peppers, and all spices except bay leaves. Saute a few minutes. Put this mixture into the crockpot and stir in pumpkin puree, broth, beans, chiles, and bay leaves. Cover and cook on low for 6-8 hours.
